Incredible look into the mind of a living legend. Many of these recipes are unlikely to be replicated by a home cook simply due to the difficulty in procuring any of these ingredients. However, the techniques and insight are wonderful. My personal favorite is his recipe for dashi. I have been making it wrong all my life ?
